Traditionally, cured meats have been produced using nitrites. nitrites play an integral role in suppressing harmful bacteria. Most notably the toxin that causes botulism. They also enhance color, extend shelf-life and add a notable flavor to meat products.
In the 1990‘s food scientists discovered naturally occurring nitrites in vegetables, most noticeably celery powder. USDA labeling standards require products containing celery powder as a source of nitrites to be labeled “Uncured” and “No Nitrite or Nitrate Added.” The label also has an asterisk with small print stating: “*Except for those naturally occurring nitrates or nitrites in celery powder.”
Common scientific knowledge tells us our bodies cannot differentiate a chemical compound such as nitrites even if they are “naturally occurring”. These “naturally occurring nitrites” are also not subject to the regulatory limits conventionally produced nitrites are.
Consumers have been mis-lead when shopping for healthier meat products. USDA labeling standards that include small print give the impression that a product may be a healthier choice. The human body cannot distinguish “naturally occurring nitrites” from those made synthetically.

Hewitt’s Meat Processing Inc. was founded in 1939 by Marvin and Crystal Hewitt. Upon returning from World War II Marvin and Crystal’s son Jim and his wife Evelyn became involved eventually purchasing the business. Jim and Evelyn owned and operated the business until 1992. Jim and Evelyn’s daughter Barb and her husband Tom purchased the business opening a retail outlet in Marshfield in 2012. Current owners John and Amanda Franseen mark the 4th generation carrying on the Hewitt’s tradition of quality.

Bacon Care and Cooking InstructionsWhen receiving your order, promptly refrigerate all packages of bacon that will be cooked within the next three (3) days. Any bacon that will not be eaten in the next three days should be stored in the freezer.
Cooking Your BaconThere are a few ways to cook bacon. We recommend baking bacon for the best results.
